CNN —After 26 years in business, a Michelin-starred restaurant in Belfast, Northern Ireland, is closing due to costs becoming too expensive – for both customers and the restaurant operators. Deanes EIPIC, the flagship fine dining restaurant of an empire started by Northern Irish chef Michael Deane in the 1990s, won its first Michelin star within a year of opening as Deanes in 1997. ‘The cost has spiralled out of control’“EIPIC as a whole wasn’t a restaurant that was dying,” he says, but “people have an expectation when walking through the doors. EIPIC follows the classic fine-dining model upon which many a Michelin star has been earned throughout Europe and beyond. Says Greene, “people are willing to travel from the city or anywhere for good food and good accommodation.

We’re gonna push you.’”Chef Simon Rogan thinks a change in kitchen culture is overdue. Meanwhile, reality TV shows glorifying intense and even toxic kitchen culture, such as “Hell’s Kitchen,” have been captivating audiences for years. Rogan, seen here on his farm in Cartmel, England, claims there has never been a better time to join the restaurant industry. A commis chef (novice chef) in our rural location makes about £30,000 [per annum] ($38,155),” says Rogan. Most of their restaurants offer a five-day work week and a 10-hour work shift, as opposed to the six-day work week followed by many of the region’s eateries.

Noma, the Danish restaurant considered one of the best in the world, said Monday that it would close its doors next year and reopen as a test kitchen. “To continue being noma, we must change,” Noma’s owner René Redzepi said on the restaurant’s website, without elaborating why the restaurant was closing to regular service in the winter of 2024.
An intern at Noma said she was told not to laugh during an unpaid stint at the world's top restaurant. Namrata Hegde worked at Noma in 2017 but said she spent little time learning about cooking. The closure comes as founder René Redzepi told the Times that he cannot compensate staff fairly while keeping the restaurant open. Her managers, who were junior chefs at Noma, told Hegde that she was not allowed to make noise, including laughter, while she worked, she told the Times. "I thought an internship was about me learning, as well about contributing to Noma's success," Hegde told the Times.

REUTERS/Yuya ShinoCOPENHAGEN, Jan 9 (Reuters) - Noma will close as a full-time restaurant in 2025, with the $505 per head foodie favourite focusing on pop-ups and innovation instead in order to secure a long-term future. "In 2025, our restaurant is transforming into a giant lab - a pioneering test kitchen dedicated to the work of food innovation and the development of new flavors," Noma said in a posting announcing the move on its website. "Our goal is to create a lasting organization dedicated to groundbreaking work in food," said Noma, whose name is a play on the Danish words "nordisk mad", meaning "Nordic food".
